Food Service Associates (Henley) Limited were independently appointed by the Imperial War Museum, at each of its five locations between 2000 and 2003, in direct competition with other major consultancy firms. In each location we assisted the local management team with the retendering of the catering contracts - preparing tender specifications, advertising the contracts, shortlisting caterers, evaluating the bids and assisting in contract negotiations and contract mobilisation.

Each site required a very different approach to the tender specification and selection process due to the diverse nature of the contracts. At Duxford visitor catering is of prime importance with corporate hospitality forming only a small proportion of the contract, whilst on board HMS Belfast and at the Cabinet War Rooms 90% of the turnover is derived from Function and Banqueting catering and only 10% from Museum visitor catering. At Imperial War Museum - North, we let a contract for a greenfield site with no previous trading record and a requirement for significant capital investment from the caterer in the kitchen and servery fit out. The brief to the caterers in the tender package at the London site incorporated the design, investment and management of a major refurbishment of the cafe operation, a process which required specific knowledge of the investment and project management experience of each of the tendering parties.
