The Museum of London

Food Service Associates were appointed by The Museum of London in January 1999 with an initial brief to manage the competitive tender process to engage a catering company on a concession contract to operate the Museum Café. This brief was subsequently extended to include a feasibility study for letting two previously unused areas to a commercial restaurant operator on a lease basis. Following extensive market testing it was confirmed that the areas were not viable as commercial operations capable of competing with the high street and this project was abandoned.

Food Service Associates continues to work with the Museum providing ongoing performance reviews. Customer Service standards are monitored through a series of mystery shopper visits. An annual Health and Safety and Food Safety audit ensures correct compliance in this critical area. An annual finance audit checks and verifies turnover from the till receipts, invoices and banking records to ensure the Museum receives the correct commission payment. The finance audit also monitors financial performance by benchmarking spend per head, spend per visitor, penetration rates, turnover, etc. against other similar visitor attractions.
