The Museum in Docklands
In 2003, the Museum in Docklands was brought into the Museum of London Group. Food Service Associates were invited by the MiD to re-evaluate the proposals for catering on the site prior to opening. The catering facility had been designed as a traditional cafeteria servicing the museum visitor. The new management team, recognising the opportunity that the prime ground floor dockside location presented, wished to explore the opportunity to let the space on a more commercial basis.
A feasibility study was completed and the benefits and disadvantages of adopting
a more commercial approach were explored. The result was a change in direction
from a museum visitor catering facility to a high street bar, lounge and dining
room concept open to the general public. The contract was successfully tendered
and Searcy's opened the doors on 1802 in May 2003. Since opening, the restaurant
has received excellent reviews and is making a name for itself in the local business
community and residential market.
Searcy's performance is monitored through FSA's ongoing performance review programme. Mystery shoppers visit the restaurant and/or bar three times a year and report back on food and service standards. An annual Health and Safety and Food Safety inspection ensures compliance with current legislation and the annual finance audit verifies the contract turnover to ensure payment of the correct commission as well as ensuring consistent and adequate control procedures exist.
