Southwark Cathedral
Food Service Associates were appointed by Southwark Cathedral Enterprises Limited to manage the competitive tender process to source a caterer to operate the Refectory Restaurant. Food Service Associates were required to research the local market and provide recommendations on the "positioning" of the catering facility, forecast income projections and provide an outline of the contract options available, prior to tendering the service. The Refectory, part of a £5.5 million Visitor Centre, partly funded by the Millennium Commission now operates as a high quality mid-spend (£10.00 per head) Café Restaurant, providing an efficient day time service to the local business community and Cathedral visitors. Food Service Associates were recommended to the Client for this project but were selected in competitive tender for their innovative approach.
