Case studies
Weston Park MuseumFood Service Associates were brought in by the Trust to develop a concept and business plan for an area provisionally allocated to 'catering' within the outline plans for the refurbished Weston Park Museum. Extensive local research was conducted in the form of demographic analysis and field competition surveys. Future management options were explored and the pros and cons of operating in house versus contracting out were analysed. Different operating concepts from cafeteria to bar to restaurant to cafe bar were considered in light of the spacial allocation, capital budget allocation, management options, income required, target market needs and field competition. A preferred catering concept was identified and working with our design associates, concept designs, M+E schedules and budget cost plans were worked up for the area. These, together with a business plan identifying annual income to the Trust, were submitted to the Trust for inclusion within their Heritage Lottery Fund (HLF) Stage Two bid. Following it's successful HLF application, FSA are now assisting the Trust in the development of detail design and supervision of the fit out process. In conjunction with this, the contact to manage the cafe bar is being tendered by our management consultants. |
